Apple-Soy Roasted Salmon

The savory herbs and spices collide with the subtle flavors of this roasted salmon.
Ingredients
  • ¾c. 100% apple juice
  • 4 wild Alaskan salmon fillets
  • 2 tablespoons wheat-free tamari (low sodium)
  • 1 tablespoon sesame oil
  • 1 teaspoon agave nectar
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • ¼ teaspoon Thai Kitchen Red Chili Paste
  • 2 scallions
  • 4 lime wedges
Instructions
  1. Step 1: Place the apple juice in a small pan. Bring to a boil over high heat and reduce by about half. When reduced, set aside to cool
  2. Step 2: Place the salmon in a single layer in a shallow baking dish
  3. Step 3: Sir into the cooled, reduce apple juice, the tamari, sesame oil, agave nectar, garlic, ginger, and red chili paste. Pour the marinade over the salmon and refrigerate for about 1 hour. If time does not permit, 15 minutes will do.
  4. Step 4: Preheat the oven to 450
  5. Step 5: Before roasting the salmon, pour the excess marinade off the fish into a small pan. Bring the marinade to a boil over high heat. Cook until reduced by half, about 7 minutes.
  6. Step 6: Place the salmon in the oven and cook for about 7 minutes. Brush salmon with the reduced marinade and continue cooking for about 7 more minutes, or until golden brown and cooked through. Before serving, brush again with the marinade, and garnish with the scallions and lime wedges.
