Oh, now I remember why I love cooking with the Blood Sugar Solution program. This dish is absolutely wonderful! The chicken just fell off the bone and was so tender and I believe I tasted that apple in there too. Wonderful dish to have any time but when you are busy cleaning house it is especially good! Yum!

Ingredients
  • 2 tablespoons sesame oil
  • 1 tablespoon mustard seeds
  • 1 cup onion, chopped
  • 1 tablespoon garlic, chopped
  • 1 tablespoon curry powder
  • pinch of cayenne pepper
  • 2 large (or 4 small) chicken breast, bone in
  • ½ teaspoon sea salt
  • 1 small carrot, diced
  • 2 cups cauliflower, medium florets
  • ½ green bell pepper, diced
  • 1 apple, chopped
  • 1 (13 oz can) coconut milk
  • 1½ cup frozen peas
  • chopped fresh cilantro for garnish
