Take a look at these wonderful beans—Edamame shelled soybeans! Don’t they look good? They are delicious and just perfect with the salmon! However, I think I loaded up on sugar tonight. I used maple syrup in the recipe for the Soy Good Maple-Glazed Salmon. I just wanted to see how it would be compared to the Apple-Soy Roasted Salmon. I know…excuses and justification will not help me shed any pounds. But now that I know I will not have it again, I will use the Apple-Soy marinate for the salmon. Maple syrup is loaded with zinc and manganese so I have gotten some good nutrients from it and I found out how the dish would taste. I didn’t have much of the sauce, you know, I just dipped the salmon in the sauce dish and got the sauce on the back of my fork. And I threw out the rest…I’ll freeze some of the salmon but when I have it again I will not have the sauce. I hope that will help because the bad thing about maple syrup is that a large portion of the calories comes from sugar.
