Poached Pears with Cashew Cream

Do you like ice cream? How about black walnut ice cream? Well, you have to try this nice little dessert, it was like having my ice cream and eating the cake too! It is delicious! And so easy to make…here again, getting the blender out was the hardest thing but then it was well worth it because it made the cashew cream perfectly smooth! By the way if you are counting calories, one serving of this dessert is 276 calories.

  • 1 cup raw cashews
  • 1 tablespoon raw honey
  • 2 drops vanilla extract
  • 2 pears
  • 1 cinnamon stick
  • ¼ cup fresh mint, plus more for garnish
Note: Allow time for cashews to soak overnight.

    • Oh! It is delicious! I promise you, I thought I was having ice cream. When I think of all the times I bought those granola bars…thinking I was eating better. Those bars couldn’t come second to these pears!
