Asparagus and Cheese Frittata

Who among you thought that asparagus wouldn’t be good in a frittata? I have to admit, I was one but I wanted to try it and I am glad I did! It makes a wonderful breakfast, lunch or dinner. Yes, sometimes I like to have eggs at night. Don’t forget to vote on my recipes!

Asparagus and Cheese Frittata

A classic combination of asparagus and Parmesan, with the addition of herbs and tomato.
  • ½ pound asparagus, trimmed and cut into 1-inch lengths
  • 6 large eggs
  • ⅓ cup grated Parmesan cheese
  • 1 tablespoon finely chopped parsley
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • ¼ cup chopped tomato
  • 1 tablespoon snipped chives
  1. Bring a large pot of salted water to a boil. Drop in the asparagus and cook for about 2 minutes, until crisp-tender. Drain and transfer to a bowl of ice water to stop the cooking. Drain the asparagus and set aside.
  2. In a large bowl, beat the eggs with the cheese, parsley, salt and pepper. Stir in the blanched asparagus.
  3. Preheat the broiler to high.
  4. Heat the extra-virgin olive oil in a 10-inch ovenproof skillet over medium heat. Add the egg mixture and cook, lifting the edges of the eggs as they set, allowing the uncooked egg to run underneath. Cook for 5 to 10 minutes until the bottom is golden brown and the top is almost set but still runny. Transfer the frittata to the broiler and cook about 1 minute until the top is set and golden.
  5. Remove from the oven and slide onto a plate. Garnish with the chopped tomato and chives.

  1. Asparagus with just about anything would be fine with me! Your frittata looks delicious — those tomatoes have a beautiful garden-fresh color.

    • Yes! I love those little cherry tomatoes! I didn’t know you like asparagus so much. Glad I do now… I fixed asparagus wrapped in steak one time and it was very good. But, I don’t really like steak all that much and it isn’t all that good for you…so maybe I’ll try chicken next time.
