Asian Bean Salad with Tahini Dressing

Asian Bean Salad is pretty good and the best part is that it is gluten-free! I enjoyed this dish very much however, I have to report that the tahini dressing didn’t turn our like I think it was supposed to. The directions in the recipe says to ‘pour the dressing over the salad’ but my tahini dressing was too thick to pour. And I had all the ingredients too. With the bean sprouts, I thought it was like eating pasta…but so much better for you!

Tahini is a Middle Eastern sauce that has a delicious tang. Added to a salad like this, it results in a light, refreshing dish full of flavor.
Ingredients
  • 4 cup fresh baby spinach
  • ¼ cup chopped scallions
  • ½ cup snow peas, strings removed
  • 1 cup bean sprouts, rinsed and drained
  • 1 cup canned adzuki beans, drained

Instructions
  1. In a small bowl, whisk together the tahini, olive oil, garlic, lemon juice, salt, and pepper. Place the spinach, scallions, snow peas, bean sprouts, and beans in a large salad bowl. Pour the tahini dressing over the vegetable mixture and toss together to coat. Serve.
