Peach Quinoa with Flax and Nuts

Peach Quinoa with Flax and Nuts

This simple dish is so Yummy! And easy to prepare, I could even cook this before going into work for a nice breakfast or have it for a hot snack on a cool evening. Quinoa and flaxseed provide a great supply of omega-3 fats! I love the crunchy texture of the nut topping! I’d never even heard of Quinoa and did not like it by itself when I first cooked it. But when other ingredients are added to Quinoa its flavor changes accordingly and takes on those flavors.
