Zucchini and Onions

Another wonderful side dish with veggies! Another YUM! I have listed this dish only as a side dish but I feel this would be a great snack as well. When you have leftovers you could quickly heat up a cup of this and eat with some other raw veggies or nuts. And the best part about it, is that you will not feel that you have ‘cheated’ on your ‘diet’ and or that you have been deprived of something good to eat. It’s like it will replace that bowl of potato chips that is loaded with ‘non-food’ ingredients that make you sick! I bet you can’t eat just one spoonful of this dish.

Easy to cook side dish
Ingredients
  • 1 tablespoon olive oil
  • ½ onion, thinly sliced
  • 2 medium zucchini, thinly sliced with skin
  • a pinch of salt
Instructions
  1. Sauté onions in pan with olive oil. Cook till translucent and then lay thin slices of zucchini on top of the onions. Cover and continue cooking on low heat about 15 minutes till zucchini is simi- soft with fork.
