Poached Eggs over Kale

I’m sure this creation is out there somewhere but I “created” it this morning in just a jiffy. I hope you will enjoy the flavors that this dish brings out. I love Eggs Benedict but it is a very ‘loaded’ breakfast with poor nutrition…and this dish will replace that one.

Poached Eggs over Kale

This dish is better than Eggs Benedict to me and a lot healthier.
  • ¼ onion, chopped
  • 1 garlic clove, chopped
  • 2 mushrooms, sliced
  • ¼ cup of water
  • slivered almonds (a few)
  • 1½ cups of kale, trim stems to your liking
  • 2 eggs
  • Parmesan cheese (optional)
  1. Sauté onions and garlic in pan with two or three turns of olive oil until the onions are a little golden. Add mushrooms and simmer for another few minutes and add water and kale. Allow kale to cook a little till it shrinks. Crack two eggs on the top of the kale, cover and continue cooking till the eggs are poached to your liking. Toss slivered almonds on top for garish.
