It was so YUM that I know I will have it again and again! And I thought I’d miss meatloaf while on the Blood Sugar Solution program. This takes the place and much healthier for you!

Good ole meatloaf but healthier!
Ingredients
  • 11/2 cups of pecans
  • 1lb of turkey
  • 10oz frozen spinach
  • 2 eggs
  • 1tbs olive oil
  • ½ small onion diced
  • 1tsp basil
  • ¼ tsp salt
  • pinch of pepper
Instructions
  1. Preheat oven 375 degrees, grind pecans in processor, mix with all other ingredients and place in oiled loaf pan, bake for 30 minutes.

  1. Oh, yes…the pecans give it a nice little crunch. I love this dish and will have it again too! It deserves 5 stars.
